Chicken Combo Box


  • 75g / 2.6 oz sweet potatoes
  • ½ tsp olive oil
  • 120g / 4.1 oz cauliflowers
  • Cooking oil spray (olive/avocado/coconut)
  • 90g / 3.2 oz baby spinach
  • 4 oz chicken thigh fillets (boneless and skinless)
  • 1 tsp all-purpose seasoning mix

Cooking Instructions

To prepare chicken:
1. Preheat oven to 375°F / 190°C / Gas 5.
2. Coat baking dish with cooking oil spray; arrange chicken in dish so that pieces do not touch.
3. Spray chicken with cooking oil spray; sprinkle seasoning mix on chicken.
3. Cook for 20 to 30 minutes, or until juices run clear when meat is pierced with the tip of a knife.

To prepare sweet potatoes:
1. Preheat oven to 375°F / 190°C / Gas 5.
2. Scrub sweet potato well and pat dry with a towel.
3. Prick sweet potato with a fork; place on baking sheet. Drizzle with olive oil.
5. Bake for 30 to 60 minutes. (After 30 minutes, check for doneness by piercing the potato with a fork. It should feel soft and the fork should easily go through.

To sauté spinach:
1. Heat a pan on medium heat; add olive oil.
2. Add spinach and salt (if desired; optional). Cook; stirring frequently, for 3 minutes or until soft.

To steam cauliflower:
1. Heat water in a covered pot with steamer basket. The top of the water should not touch the basket.
2. Place cauliflower in the basket. Steam for about 5 to 7 minutes until the cauliflower is tender but still has a crunch.
3. Carefully, using potholders or a kitchen towel, remove the steamer basket from the pot or pan. Set aside.
